Smash & Fold Grilled Cheese Tacos

We smash and fold grilled cheese sandwiches into a 'taco shell', crisp them up and then stuff them with taco beef, more cheese, diced tomatoes, green onion and sour cream. Serve with a side garnish of shredded lettuce, tortilla chips and queso.
